This post is dedicated to all you fellow foodies out there who love healthy, natural foods and easy recipes.
I have formulated my own recipe for veggie burgers that are completely delicious and compatible with all vegan, raw, and gluten-free diets (even though I am not personally someone who follows any of those specific diets).
I have had a huge container of chickpeas in my fridge for quite some time and I was having trouble using them all up in salads and soups and such, so I decided to use them as a base for some veggie burgers.
I started by searching for “chickpea veggie burger recipes”, and I browsed through those for an unnecessarily long amount of time. I’m the type of person who is way too fascinated by food and will read different recipes for fun even when I don’t plan on cooking anything, so I obviously didn’t make any progress when looking for a specific recipe that appealed to me.
Although I did find this awesome page that has some MOUTHWATERING veggie burger photos and recipes.
After finding different aspects of recipes that I liked, I ended up inventing my own creation, so I felt I needed to share my recipe.
The only issue with that is I rarely use measurements or write down what exactly I do when preparing food, so my recipe will be very basic and will only have a couple specifics.
Another disclaimer: I think this recipe needs perfecting because in the end the burgers tasted incredible but they fell apart pretty easily when I grilled them. And another disclaimer: they’re pretty spicy, so if you’re lame you can substitute the hot ingredients for something else. Just kidding, those with sensitive taste buds aren’t lame, they’re just special 🙂
So HERE is the moment I’m sure you’ve all been waiting for: the actual recipe.
-Roughly 2 cups of cooked chickpeas
-1/2 large zucchini
-1 small carrot
-large handful of cilantro
-1/4 red onion
-1/4 medium-sized jalapeño
-2 spoonfuls of tahini butter
-2 tbsp olive oil
-1 spoonful of apple cider vinegar
-1 spoonful rice wine vinegar
-spoonful of chopped ginger root
-SPICES including garlic powder, onion powder, cumin, black pepper, I didn’t measure these at all; I just sprinkled in as much as I wanted of each.
1. Mash the chickpeas in a large bowl.
2. Grate the zucchini and carrot, add to the bowl.
3. Chop the onion, cilantro, ginger root, and jalapeño into small pieces and add to the bowl.
4. Add the rest of the ingredients, and mix together until blended.
5. Use your hands to form the mixture into patties, then grill on medium heat until they’re cooked as much as you like!
Honestly, this doesn’t even really NEED to be cooked and you can eat the mixture raw. I only ended up cooking the burgers for a couple minutes so they were a little crispy but you can serve them any way you like.
They’re delicious with fresh salsa or avocado on top, and I’m sure any sort of dipping sauce will taste great. I put some leftover burger in the fridge, and the next day I threw two into a bowl, mashed them up and ate it cold like a delicious spicy chickpea power bowl heavenly masterpiece.
So I highly recommend these to all you healthy eaters out there who love veggies and spices. They were actually pretty fun to make, except for when cutting the red onion made my eyes burn, sting, swell, any other unpleasant verbs you can think of. Oh well, it was worth it.
