Today is a good day because I am blessing you all with another one of my favorite food recipes.
And this is not just any recipe…it’s a PANCAKE recipe. Everyone knows that having pancakes for breakfast always leads to a fabulous day. And these are not just pancakes…they are HEALTHY pancakes. All but one of the ingredients have some form of health benefit, so I think that qualifies them as healthy (unless baking powder has health benefits, then ALL of the ingredients are good for you. I should research that).
Also, these are not just healthy pancakes…they are healthy VEGAN pancakes. So no animal products necessary for this recipe! Yay for helping animals, the environment, and our bodies! I’m not actually a vegan myself, but I try to eat vegan more often than not and hopefully someday I’ll fully get there.
But I surely do not miss regular, non-vegan pancakes because I now have these in my life. They are fluffy and soft, easy to make, and taste INCREDIBLE with any sort of toppings. Calling these the ‘Best Vegan Pancakes in Existence’ may seem like a hyperbole, but out of all the vegan pancakes I have personally tried, these are the only ones that do not fall apart, have a relatively normal texture, and actually taste amazing. So in the existence of my life, these are the best.
Ok friends, here is the list of ingredients and the recipe (for a pretty big, one-person serving):
- 1/2 cup brown rice flour
- 3 tbsp ground flax seed
- 1 tsp baking powder
- 1/2 mashed banana
- 1 tbsp cinnamon
- 1/2 cup almond milk
- 1 tbsp vanilla
- non-dairy butter or coconut oil, or anything else to keep pancakes from sticking to the pan
Directions (these will be very basic as I’m assuming most people know how to make pancakes)
- mash the banana in a bowl first, then add all the other ingredients and mix well
- heat a pan to medium heat, then spread butter over the surface
- pour on the pancake batter, flip when edges start to brown
- PANCAKES DONE
Keep in mind, these pancakes are relatively thick, and they’re supposed to be heavy and moist (sorry for those of you who hate that word). Sometimes flipping them can be hard, but once you get the hang of it things get easier.
Top with anything your heart desires; Maple syrup, bananas, and berries are all fabulous choices. One time I melted coconut oil, honey, and peanut butter together and poured that over the top. No regrets there.
This recipe is dedicated to anyone who has tried so many healthy pancake recipes and failed. These pancakes have reignited my faith in the world.
